A birthday.

A year ago a little blog was born.
Thanks for giving me an outlet to share with you guys.
All of you are the best. Ever.
In the spirit of all things being birthday festive, 
I give you a major sweet tooth recipe J and I tried
a couple of weeks ago.





Birthday Cake Pancakes.
Seriously, these pancakes are le-git.
Do yourself a favor.


Calls for:
1 1/2 cups all-purpose flour
1 cup yellow cake mix (I love a ton of sprinkles, so I used Funfetti cake mix)
1 Tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1 1/2 cups buttermilk
1/2 cup milk
2 Tablespoons butter, melted
1 teaspoon vanilla extract
1/3 cup (1.75 oz bottle) sprinkles

For the icing (if you're feeling really crazy):
whipping cream
powdered sugar


 Heat your nonstick skillet over medium heat.
 In a large bowl, combine the flour, cake mix, sugar, baking powder, soda and salt; put aside.
In a separate medium bowl, lightly beat the eggs with whisk. 
Add the milk, butter and vanilla and whisk to combine. 
Pour the wet ingredients into the bowl with dry ingredients and stir until mixed. Fold in the sprinkles.
Scoop 1/3 cup of batter onto the skillet, leaving room for the batter to spread into larger rounds. 
When the pancakes bubble, flip and cook for another 1-2 minutes. 
Transfer to a plate. If you'd like to keep them warm, try covering with warm kitchen towel.
Serve with syrup or optional icing.

For the icing, mix together your powdered sugar and whipping cream 
until you reach a desired consistency and taste. 
Pour over pancakes. YUM.
